Preserving the legacy of Black agriculture and foodways through land and food access.

Adrian Lipscombe is a proud sixth-generation Texan dedicated to innovating and cultivating community engagement through green architecture, active transportation, and sustainable food production. As the former Bicycle Coordinator of the City of Austin, Adrian played a major role in developing successful bike share systems in both Austin and San Antonio. She went on to establish the Uptowne Cafe & Bakery in La Crosse, Wisconsin, through which she skillfully weaves her Southern upbringing and African American culinary heritage with Midwestern ingredients, creating a unique experience cherished by the Northside community.

As one of the few Black restaurant owners in the area, Adrian’s vision gave birth to the 40 Acres & A Mule Project, aimed at preserving the legacy of Black agriculture and foodways in the United States by acquiring Black-owned land.

Adrian is an ardent advocate for food sovereignty within all communities, and serves as advisory board member of Foodways Texas, the Austin Travis County Food Policy Board, and the Edna Lewis Foundation. She is also a founding member of the Muloma Heritage Center, a non-profit organization dedicated to exploring the African Atlantic influences in American culture and their contributions to American cuisine. Adrian is currently pursuing a PhD in Urban and Regional Planning at the University of Texas at Austin. In her return to Austin, Adrian looks forward to continuing to showcase the African American influences on food culture today and to feeding friends, family, and her community.
